Bread Balls / Fried Bread Balls Stuffed with Potatoes



Ingrediants:



Bread -10 slices

Potatoes – 2 large cooked and mashed

Onion-1 chopped finely

cauli flower- 1 cup grated(use any kind of vegetables)

Chilli Powder- 1 tsp

Garam Masala Powder – 1 tsp

Green Chilli – 1 chopped

Corn Starch / Corn Flour – 3 tblspn

Salt to taste

Oil- 1 tblspn + for deep frying



Method:



Heat 1 tsp of oil in a kadai. Add in onions and green chillies and sauté for 2 mins.


Now add in cauli flower pieces and mix well. Season with salt. Add in chilli and garam masala powder and mix well.

Add in mashed potatoes and mix well. Let it cool down a little. Divide into equal portions and make into balls. Set this aside.


Now take the bread slices and remove the crust off.
 Dip it in water and squeeze it. 
Put this in a bowl and mix well. Divide into equal portions and set aside


Take one portion of bread and press it slightly with your hands and put the filling in the middle and seal from all sides. Do the same to all dough.


Now roll this ball in corn flour and set aside.




Heat oil for deep frying and fry this till it gets golden brown. Drain it in a paper towel.



Serve hot with ketchup.

Bombay Pav Bhaji – a Street Food Recipe (without Pav Bhaji Masala)

I love to eat street food dishes..The place where I live don’t have that many street food shops..It does have a few portable ones and I have tried their food couple of times..

Ingrediants:

Pav Buns as needed
Butter-2 tblspn
Onion-1 sliced
Lemon Juice as needed

For Bhaji:
Vegetables(I used potato,cauliflower,peas)
Onion-2 finely chopped
Tomato-3 chopped finely
Cumin powder / Jeeraka podi-1 tsp
Chilli powder -2 tsp
Garam masala powder-1 tsp
Coriander powder / Malli podi-2 tsp
Chat Masala powder-1 tsp
Salt to taste
Red food colouring -1 pinch(optional)
Coriander leaves / Cilantro for garnishing
Butter-5 tblspn

Method:

Take chopped vegetables in a kadai and cover it with water,so that vegetables are just covered..Add salt to this.Cook this till the vegetables are well cooked..

Melt butter in a kadai and add in onions and cook till golden brown.

Add in all spice powders and mix well.Add in chopped tomatoes and mix well.
Pour in some water and season with some salt.Add in food colouring too..

Cover and cook this for 10 to 15 min until the tomatoes becomes mushy and the gravy turns saucy.

Now add in all the cooked vegetables and mix well.

Now take a potato masher and start mashing the vegetables..Mash till the vegetables are no longer whole..

Cover it and simmer for 10-15 mins..Serve with pav buns..

To serve pav bhaji...Add a tblspn of butter in a tawa and add some bhaji on top of it..Add some cilantro on top.

Set this bhaji mixture to a side and heat another tblspn of butter and add a cut open pav bun and fry for 1 min.

Now remove the pav bun to a plate and add the bhaji to the side..Dollop a spoonful of butter on top and add some onions too..Squeeze some lemon juice and serve..

Bread, Sugar & Ghee - Quick Snacks for Kids

 
The ingredients for this is pretty simple, just ghee, bread and sugar..These three ingredients when combined makes the most amazing recipe..I used ghee, you can easily use butter. You can also use any bread of your choice and one more thing is you can substitute sugar with honey..I can assure, this makes the perfect snack for your kids..Try this out and let me know how it turned out..


Ingredients:

Bread - Any Bread of your choice around 3 cups
Ghee / Butter- 3 tblspn
Sugar as much as you need

Method:

Cut your bread into cubes. Heat ghee in a kadai. Add the bread cubes in it and toss well with the ghee.


Fry this for a few minutes, may be for 5 mins till they change colour and turns golden. Now sprinkle your sugar in and mix well for few seconds.


Serve with a glass of milk.

Aloo Paratha

Ingrediants:

For Dough:
Wheat flour-2 cup
All purpose flour(Maida)-1 cup
Salt to taste
Oil-1 tblspn

For Filling:
Potato-3 large boiled and mashed
Onion-1 chopped finely
Coriander leaves- ½ cup chopped
Mint Leaves- ½ cup chopped
Green chilli-2 chopped finely
Cumin seeds-1 tsp
Chilli powder-1 tsp
Turmeric powder-1 tsp
Garam masala powder-1 tsp
Chat masala-1 tsp
Lemon juice- 1 tblspn
Salt to taste

Method:

In a mixing bowl add wheat flour,maida,salt  and mix well.Pour in water and make a soft dough.Apply oil over the dough and cover it with a damp cloth.Let it rest for 30 min.

Mix every ingrediants given for the filling together.Set this aside...

Divide the dough and the filling into equal portions.Make it into round ball.

Take the potato ball and fill in inside the dough ball and roll it into thick paratha.

Heat tawa and fry this paratha by applying oil or ghee on both sides till golden..

Serve it with raita..

Gutti Vankaya -Stuffed Brinjal



Ingredients:

Ground nuts-1/4 cup
Brinjal-5
Tumeric-1 tbsp
Chilli powder-1 tbsp
Coriander powder-1 tbsp
Garlic- 3 or 4
Salt to taste
Oil-2 tbsp
Curry leaves
Mustard seeds
Coconut -1 tbsp

Preparation:

Dry roast ground nuts. Grind roast ground nuts,tumeric,chili powder,salt,coriander powder,garic and coconut.


Take the brinjal, on the opposite of the stem slit brinjal till 3/4th and one more silt at the same as above like plus(+) shape.There should be a joint in the bottom of the brinjal. In the plus slit of the brinjal fill the paste tightly to it

(Still you have 3/4th to 1/2th of the paste) Take 2-21/2 cup of water.Add water  little by little to the remaining paste and mix without any lumps.Keep heavy bottom pan and do seasoning,add stuffed brinjal and remaining paste.


Turn the flame to medium low, cover with lid..

Serve hot with rice

Andhra Royallu Iguru ~ Prawns Curry Recipe

Today I am sharing with you a family favorite sea food dish, Andhra Royyala Iguru, a simple fresh prawn curry preparation in sauteed onions and Indian spices. Andhra Royallu Iguru is a sea food curry recipe from Andhra where fresh prawns are cooked in onions and Indian spices and masala resulting in a very tasty curry preparation!




Ingredients:

500 gms prawns shelled, de-veined and cleaned
1 large onion finely chopped
1 medium tomato chopped
10 curry leaves
1 tbsp ginger garlic paste
3 green chillies slit length wise
1 tsp chilli pwd
1/3 tsp turmeric pwd
1 tsp coriander pwd
½ tsp cumin pwd
1/4 tsp garam masala pwd
salt to taste
2 tbsp oil
chopped coriander leaves for garnish


Preparation:

Heat 2 tbsp oil in a heavy bottomed vessel. Add the chopped onion and green chillis and fry till transparent. Add the ginger-garlic paste and curry leaves and fry for a minute.


 Add chopped tomatoes and fry for another 3 minutes.



Add turmeric pwd, coriander pwd, cumin pwd and chilli pwd. Mix well.


Add the cleaned prawns, salt and mix well.


 Cook on medium heat for 5 minutes. Now add 1 cup of water 


and cook further covered with lid for 5-7 minutes on medium heat. 

  Turn off heat and garnish with chopped coriander/cilantro leaves. Serve hot with steamed white rice or chapatis/rotis.

Toor Dal Kofta

This is a different type of vada preparation,Usually they make vada with channa dal.but I tried with toor dal and it came out great.Adding of baking powder make this more soft and crispy.Please try this and let me know what you think...
Ingrediants:

Toor Dal-1 cup(soaked for 4 hours)
Onion-1 chopped
Green chilli-3 chopped
Garlic-6 cloves
Curry leaves-a handful
Coriander leaves-a handful
Cinnamon(pattai)-1 inch piece
Saunf(sombu)-1 tblpsn
Cumin seeds(jeera)-1 tsp
Rice flour(Arisi mavu)- ½ cup
Besan(kadalai mavu)- ½ cup
Baking powder-2 tsp
Salt to taste
Oil for deep frying

Method:

Heat oil for deep frying.

Make a coarse paste out of the soaked dal and tip this in a bowl.

Add all ingrediants except oil and flours in a blender and roughly crush it.Put this in the Ground dal and mix well.

Add rice flour and besan and mix well.
 Make small koftas out of it .
  fry them in medium heat oil.Deepfry koftas.


Serve hot with ketchup or chutney.

Brinjal masala curry

My hubby loves brinjal, I hate to eat. Searching for  brinjal curry recipe through internet. I got this recipe, tried for first time its looks yummy and taste also yummy. My todays lunch with  this ymmy brinjal curry.



Ingredients:

  1. Brinjal/Egg plant 500 gm
  2. Onions 250 gm
  3. Turmeric powder 1tsp
  4. Salt to taste
  5. Oil for frying
  6. Curry leaves
  7. chill powder 1tsp
  8. For tempering, mustard seeds, jeera, urad dal, and channa dal.
  9. Half a cup of boiled milk (optional).

Masala:
  1. Dhania/coriander seeds 2tsp
  2. Garlic 5 to 6 cloves
 Dry roast corainader/dhania seeds, cool it and powder it in a mixie first and later add garlic cloves and grind again to get a coarse masala powder.






Method:

This curry can be done in a pan or small cooker if your short of time ( I do it this way to save time and energy) and it tastes also the same..so go for it, but cook in slow flame.

Take oil in a small cooker..add mustard seeds, chann dal, urad dal, and jeera, curry leaves and fry well.  Now add cut onions and fry well,


 add turmeric powder and salt. Now add brinjal cut into cubes and fry well and add very little water(about  2 tablespoons) and close the cooker with the lid and put the whistle and simmer for 15 minutes and switch off

.  .If you are cooking in a ordinary pan, add half cup water cover and let the brinjal cook and switch off.Now open the lid, light the stove

, put in simmer and add the ground dhania powder and chilli powder mix well in the curry and add 



some boiled  milk to the curry as this gives gravy consistency to the curry, cook for 5 minutes and switch off...those who do not like milk in curries can avoid adding milk, just adding dhania powder will do.Now the brinjal curry with dhania masala is ready to be served, can be had with rice, roti, or even vegetable biryani…tastes yummy.

Uddi vada

Ingredients:

Uradu Dal-1cup
Onion-2 sliced
Salt to Taste
Oil for deep frying

Preparation:
soak the urad dal for 3 -4 hours. 


Drain and grind the urad dal to a smooth batter. avoid adding any water while grinding. in the food processor its easy to grind without water, but in the grinder jar, you will have to add some water. then add very little water. the batter should be thick and not liquidy.


Add chopped onions. Add salt to the batter. mix the batter with the onion  and salt. 

 

heat oil for deep frying the vadas. take a bowl of water. apply some ater from the bowl on hand. take some batter on plastic sheet. give it a round shape. with your thumb make a hole in the center.



slid the vada into the hot oil. make vadas like these and slid into the oil.


fry the medu vadas till crisp and golden browned.

remove with a slotted spoon and drain on kitchen tissues.

fry all the medu vadas.



serve them hot or warm with chicken gravy. enjoy.
